Ingredients:
For the Stew:
- 1 kg (2.2 lbs) beef chuck or stewing beef, cut into 2.5 cm (1-inch) cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 carrots, peeled and cut into chunks
- 3 celery stalks, cut into chunks
- 3 medium potatoes, peeled and cut into chunks
- 1 cup frozen peas (optional)
- 2 tablespoons tomato paste
- 1 cup red wine (optional, can replace with additional beef broth)
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- 1 teaspoon dried rosemary (or 2 teaspoons fresh rosemary)
- Salt and pepper, to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions:
1. Brown the Beef:
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the beef cubes in batches (to avoid overcrowding) and brown on all sides. Remove the beef and set aside.
2. Cook the Vegetables:
- In the same pot, add a little more oil if needed, and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
